| Monday morning we took a quick walk around the hotel grounds. It's quite a large hotel (600+ rooms), but you wouldn't know it. Everything is spread around and divided nicely into smaller areas. There are a number of large pools, with lots of seating areas and plenty of lounge chairs all around. After breakfast we drove to the Port Allen airfield where Inter-Island Helicopters and our pilot Nobu gave us a phenomenal view of the Waimea Canyon and the Nepali Coast. The flight was done with the doors on the helicopter off, which added to the excitement! We flew around for about 45 minutes, then we landed in the middle of the jungle and walked a short distance to a small pond with a 70 foot waterfall dropping into it! We all stripped down to our bathing suits and jumped in. The water was a bit chilly, but we all swam over under the waterfall anyways. It started to rain really hard while we were swimming, it was really cool! Back on shore we had a tasty lunch, and then climbed back in the helicopter for another 30 minutes of flying before heading back to the airfield.
On the way back to the hotel we stopped at the Kauai Coffee Company and sampled a couple of different kinds of coffee. After some time at the hotel pool we all showered and changed, then piled into JP and Matthew's car. We went to a Japanese restaurant on the other side of Lihue, then we all went to the airport where we said goodbye to JP and Matthew and then caught a taxi back to the hotel. We stopped in Stevenson's Library for a nightcap and some tiramisu before heading to our room for the night.
